Ingredients
230g (2 1/2 cups) traditional rolled oats
200g (1 cup) buckwheat kernels
80g (1/2 cup) macadamias, coarsely chopped
70g (1/2 cup) pecans, coarsely chopped
65g (2/3 cup) oat bran
45g (1/4 cup) pepitas
40g (1/4 cup) sunflower seeds
2 tbsp maple syrup
1 tbsp pure vanilla extract
2 tsp ground cinnamon
40g (1/4 cup) dried cranberries

Step 1
Preheat oven to 160C/140C fan forced. Line 2 large baking trays with baking paper.

Step 2
Combine oats, buckwheat, macadamias, pecans, oat bran, pepitas and sunflower seeds in a large bowl. Combine the maple syrup, vanilla and cinnamon in a small bowl. Add the maple syrup mixture to the oat mixture and stir until well combined.

Step 3
Divide mixture between prepared trays. Spread to cover base. Bake, stirring 2-3 times during cooking, for 20-30 minutes or until golden and crisp. Divide cranberries between trays. Stir until combined. Set aside to cool completely. Store granola in an airtight jar for up to three weeks.

If your kitchen gets hot or humid, store the granola in the fridge for up to a month.
