This is the dopest chili recipe you will ever come across, mostly because I made it (heh). Its packed with protein and flavor. Check it out sometime!
Ingredients (serves 3-4):
> 1/2 lb of lentils (I use crimson lentils)
> 1 can of diced tomatoes
> 1 can of crushed tomatoes
> 1 can of black beans (do not drain them. That way, you don't have to add extra salt. Plus, the liquid that the black beans are stored in have a lot of protein in them)
> 1 can of corn, drained
> 1 box of mushrooms, chopped
> 4-5 carrots, peeled and chopped
> 1 yellow onion, peeled and chopped
> 2-3 baby potatoes, peeled and diced
> 1 tablespoon parsley
> 1 tablespoon oregano
> 1/2 tablespoon of paprika, or more to taste (I don't like chili powder, but that's what you can use here instead)
> 1 tablespoon garlic powder
> 1 bay leaf
> 1/2 vegetable broth cube (or equivalent in vegetable stock)
Directions:
Boil pot of water (5-8 cups) and put in vegetable broth cube as according to box instructions, or boil 5-8 cups of vegetable broth. Put in the washed lentils and cook on HIGH for instructed time. Then, drain 1/2 of the liquid and put in all of the other ingredients and cook for 30 minutes to 45 minutes on MED-HIGH. Let simmer for 15-20 minutes. Serve immediately.
