Use Duke's mayonnaise for this classic BBQ side dish. Just trust me. The ladies at the church social will JUDGE YOU if you don't. And by that I mean they'll "pray for you". Because you are a lost soul.
Boil potatoes cut in half in salted water. You could peel them first, I guess, but you can peel them afterwards much easier.
When they're fork-tender, cut into bite-sized pieces. You can mash some of them while leaving others in chunks, and that will give it a 'creamier' texture that absorbs more flavour. But you don't want to serve mashed potatoes or you'll lose friendships.
Mix 1 cup Duke's Mayonnaise,
just... so much yellow mustard (I guess about a ¼ cup?),
a splash of apple cider vinegar (this brings out the flavours),
two teaspoons sugar,
onion powder,
chopped celery stalk,
¼ cup sweet pickle relish,
½ cup diced sweet onion.Mix with potatoes. Fold in chopped hard-boiled eggs and garnish with paprika.
