Molletes is the typical student food because they're easy to make and they're also cheap. You can add in a few varieties to them like bacon, ham or chorizo (a spicy sausage), and you can't eat them without a Pico de Gallo Salsa.

For the molletes:

Simple bread buns.

Refried beans

(you can buy them already refried, and they're like a bumpy paste, but if you rather make them yourself, you have to cook the beans, then fry them with onion and a bay leaf and after they've boiled for a while, you squash them with a bit of oil- you refry them).

Cheese.

Preferably something like mozzarella. In Mexico, we use manchego, but really, any kind of cheese will do.

You cut the bread in half and spread the refried beans on each side, then you top it with cheese and you need to bake them until the cheese grates.

Pico de Gallo Salsa:

4 Tomatoes

¼ Medium Onion

1-2 Jalapeño peppers (without seeds)

*A handful of coriander leaves (optional)

2 tbsp Olive oil

Salt and Pepper to taste

Chop the tomatoes, onion, coriander leaves and jalapeño. Mix well. Add the olive oil, and season with salt and pepper.

Serve the molletes with the salsa on the side.
